Sisters, we would like to start a weekly tradition of sharing each others favorite recipes.
Today's favorite recipe is from Sandy Woodrum via Alison Whitney!
Zucchini Chicken Soup
6 cans of chicken broth (84 oz. total)
1 cup minute rice
2 small zucchinis chopped
3 carrots sliced
1/2 cup chopped onion
3-4 chicken breasts (cooked and shredded) or 8 chicken tenders
2 stalks of celery sliced
1 can of corn drained
Cook broth and rice for 15 minutes. Add onion, celery and carrots and simmer until tender.
While vegetables are simmering, make a white sauce in a separate saucepan.
White sauce:
6 Tbs. butter
6 Tbs. flour
Stir into a paste and then slowly add 1 pint of half and half
Add zucchini, chicken, white sauce, and corn to broth/rice mixture. Warm through.
Serve with Bread and Butter
