Cilantro Lime Rice
As promised - here is the recipe for the rice from our March RS Activity.
Cilantro Lime Rice
1 cup white rice uncooked
2 teaspoons butter
2 cloves garlic clove, minced
1 teaspoon grated lime zest
15 ounces chicken broth
1/4 cup water
2 Tbs fresh lime juice
2 teaspoons sugar
3 Tbs fresh cilantro chopped
1. Melt butter in a 2-3 quart pan with lid. Add rice and garlic, and cook until rice begins to turn golden.
2. Add lime zest, chicken broth and water to rice mixture. Bring to a boil. Cover and reduce heat. Simmer on low hear for 15-20 minutes, until rice is tender. Remove from heat.
3. In a small bowl, comibine lime juice, sugar, and cilantro. Pour cilantro mixture over cooked rice and fluff with fork.
4. Serve in tostadas, burritos and salads.
